I now have a flexible schedule, which allows me to work from home most days :) Although I do enjoy working from my cozy nest, it’s always a struggle when it comes to lunchtime… I love cooking, but the idea of doing it just for one is not very appealing. I usually end up preparing a bowl of fruit and yogurt or a sandwich! However, sometimes my stomach begs for something more comfy/substantial, without having to spend more than 15, 20 minutes in the kitchen - pasta and tuna gives me just that! :)
1) Heat some olive oil in a saucepan over medium heat - Add a thinly chopped yellow onion, a bay leaf and let it cook for 3 minutes (basically, until you start smelling the onions);
2) Add three ripe tomatoes (cut in chunks) - cook until it reaches a puree texture;
3) Add two cans of tuna (I prefer tuna preserved in olive oil and I always break it into small chunks) and stir until the tuna is completely blended with the tomato sauce - season with salt and pepper to taste;
4) Stir occasionnally and let it simmer for about 5 minutes;
5) Add some chilli/ piri-piri/ dried chilli flakes if you like a little hotness in your life;
6) Cook the pasta - I'm trying to make healthier options, so I have been cooking this dish with wholemeal pasta, and it is delicious, it really is :) As soon as the pasta is ready, drain it, put it back to the saucepan where you've cooked it and stir it with some olive oil to keep it moist and not stick to the bottom of the saucepan;
7) Serve the tuna on top of the pasta!
