Sweet Potato and Butternut Squash Soup...


With no precedent in this blog, it is with pleasure that I share with you a recipe created by your very own blogger: me :) In all honesty it couldn't be simpler, but that's exactly why I love it - it is delicious and takes less than 30 minutes to prepare!

My inspiration? A supermarket ready-to-use bag of sweet potato and butternut squash: I remember as if it was yesterday, I was getting some groceries  for dinner but it was one of those days where I really couldn't be bother to do much chopping, seasoning, stirring. I was really looking for a easy way out, when I saw the save-my-life bag of ready-to-use. The idea came as quickly as a flash and to this day I'm really glad about those lazy days - that's usually when I get creative in the kitchen ;)

Well, I feel I should warn you: this soup is deliciously sweet - Hubby likes to add some chopped mint when serving it, I'll either eat it like it is or with a small dollop of sour cream. But please don't let this put you off - it is sweet but it really is delicious :)

(1) Cut 350 gr of sweet potato and 350 gr of butternut squash into small squares (or any other shape you prefer);



(2) Chop a medium-sized onion;

(3) Heat some olive oil in a saucepan over medium heat - add the onion and allow it to cook for 4-5 minutes;

(4) Add the sweet potato and the butternut squash - stir so they can blend with the onion;

I usually add salt and pepper (to taste) at this stage;




(5) Add some boiling water, just enough to cover the vegetables - allow it to simmer until vegetables are tender (it should take around 25 minutes);

(6) Allow it to cool a bit before blending it - check if it needs more salt and/or pepper;
